Scrumptious shrimp with basil garlic sauce - for Mom

Hello my friend:

Mother's Day is fast approaching, and I would like to wish
a very sincere "Happy Mother's Day" in advance to all
mothers, grandmothers, step-mothers, God mothers, foster
mothers and mothers-to-be.

To make this Sunday even more special, here's a recipe
that will make a dynamite meal for Mom:

Shrimp With Basil-Garlic Sauce
=================================

Serves: 3-4

1 1/2 lbs. extra large or jumbo shrimp, shelled and deveined
5 tablespoons olive oil
5 cloves garlic, minced
1/3 cup dry white wine
1 scant tablespoon fresh lemon juice
3 tablespoons sundried tomatoes packed in oil, diced
3/4 cup butter or Earth Balance
1/2 cup chopped fresh basil leaves
Salt and pepper to taste

Preheat oven to 350.

Heat olive oil in a large skillet over medium-high heat.
Sauté shrimp 1 minute per side, remove and place in baking
dish.  Bake shrimp until just cooked through, about 6-7
minutes. 

While shrimp is baking, add garlic to skillet and sauté
briefly until fragrant but not browned.  Stir in wine,
lemon juice and tomatoes.  Bring to a boil, reduce heat and
simmer until reduced by two-thirds.  Stir in basil and
butter and add salt and pepper to taste.

Remove shrimp from oven, pour sauce over and serve.
