Father's Day is a week from Sunday, and I would like to
wish a very "Happy Father's Day" in advance to all fathers,
grandfathers, step-fathers, God fathers, foster fathers and
fathers-to-be.
To make Father's Day even more perfect, here's a recipe
that is a favorite of a very special "Dad" in my life--my
husband Mike.
It will make a scrumptious dinner for dear old Dad, with a
special bonus...
1 large Vidalia onion, chopped
1/4 cup olive oil
3 stalks celery, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
5 garlic cloves, pressed
Pinch of crushed red pepper flakes
2 teaspoons dried oregano
1 teaspoon dried marjoram
3 tablespoons chopped fresh basil leaves (or 1 tablespoon
dried)
2 cups bottled clam juice
1-28 oz. can crushed tomatoes
2/3 cup dry red wine
1 lb. firm white fish fillets (such as swordfish or orange
roughy), cut into 1" cubes
1 pound scallops, rinsed and halved if very large
1 pound extra large shrimp, shelled and deveined
1 tablespoon fresh lemon juice
Salt and pepper to taste
Grated Parmesan or Romano cheese for garnish
Heat olive oil in a Dutch oven or soup pot over MEDIUM
HEAT. Add onions and sauté 5 minutes. Add celery and
peppers and sauté for 2 more minutes.
Stir in garlic, crushed red pepper flakes, oregano,
marjoram and basil. Lower the heat, cover and cook for 2
minutes. Add the clam juice, tomatoes, and wine. Cover
and simmer for 15 minutes.
Add the fish, scallops and shrimp, and cook until the
seafood is just done - about 4-5 minutes. Stir in lemon
juice and season with salt and pepper to taste.
Top with grated Parmesan or Romano cheese if desired.
Serve with tossed salad.

First I would like to congratulate you on the clearly
written information contained on your Great Taste No Pain
Web site.
For 70 years I have mixed my foods up in a bad way. After
reading your material I am amazed that I have never
suffered any painful stomach problems.
So why have I decided to give your eating method a go?
Well, my problem has always been constipation, which
became chronic a few weeks ago when my doctor put me on
Verapamil to help regulate my pulse rate (which for no
reason they could find was racing at double the normal
rate).
I never have been one for pills and potions so was not
happy to add one to relieve the constipation on top of the
Verapamil.
It gives me pleasure to report that the new way of eating
is definitely helping. I'm hooked and can't believe how
much I'm enjoying eating alkaline foods - something I never
did much of before.
